Coffee has become a multi-generational effort here, with his children and grandchildren involved in the farm, agronomy and the work of Café de Altura, the producer association Carlos has long worked alongside.\u003c\/p\u003e\n\u003cp\u003eCarlos has also earned a reputation for experimentation. This Caturra is depulped before undergoing a carefully controlled anaerobic fermentation in sealed tanks, where variables including temperature, pH and Brix are monitored throughout the process. After fermentation, the coffee is fully washed, dried first on patios and then finished slowly on raised beds.\u003c\/p\u003e\n\u003cp\u003eIt’s a process Carlos has refined over many years, producing a remarkably distinctive character in the cup. His coffees have repeatedly placed highly in Costa Rica’s Cup of Excellence, including a fourth-place finish in 2017.\u003c\/p\u003e\n\u003cp\u003eThis harvest carries the cinnamon character that has become something of a signature of Carlos’ coffees, surrounded by bright, juicy fruit.
