After harvest, the cherries travel to Quindio resulting in an initial 24-hour fermentation. They are then pulped and placed in sealed tanks for another 24 hours of anaerobic fermentation. Following this stage, the coffee is washed, rinsed, and transferred to a dry closed tank for yet another 24 hours of fermentation. After a final wash and rinse, the beans are laid on raised beds to dry slowly under shade for about 40 days.
