This coffee was grown at Finca El Diamante in Huila and carefully processed by Jose Giraldo of Café 1959 in nearby Quindio. After harvest, the cherries travel to Quindio resulting in an initial 24-hour fermentation. They are then pulped and placed in sealed tanks for another 24 hours of anaerobic fermentation. Following this stage, the coffee is washed, rinsed, and transferred to a dry closed tank for yet another 24 hours of fermentation. After a final wash and rinse, the beans are laid on raised beds to dry slowly under shade for about 40 days. The resulting coffee is very sweet and bright.
