This coffee is a high-intervention, citrus juice co-fermented Gesha from Pitalito in Huila, Colombia, crafted by producers Jaider Hermida Cárdenas and Johan David Calderón. It offers a striking flavor profile with vivid notes of ginger, lime, lemon, lychee, and rosewater.
Southern Huila Gesha – “Lime Lemon” Process
True Gesha separations from southern Huila are rare, making this microlot from cousins Jaider Hermida Cárdenas (22) and Johan David Calderón (18) especially remarkable. From their 3.5-hectare family farm, the pair combined Gesha’s delicate florals with a bold twist: fermenting the coffee with fresh lemon and lime juice.
After meticulous hand-sorting, the coffee was depulped and co-fermented with a ratio of 1L of citrus juice per 50kg of parchment, undergoing a 270-hour, two-stage fermentation before a slow 26-day greenhouse drying. The result is electrifying—saffron-like florals, vivid citrus, and a clean, syrupy sweetness evoking lychee and watermelon.
